White Chocolate Macadamia Nut Cookies

Planters sells this nut mix with almonds, cashews, and macadamia nuts.  Everytime my mom buys them from the grocery store, it only takes about one day for the nut mix to lose all of its macadamia nuts.  So who picks out the macadamia nuts from the mix, you ask?

Well.... I'm not going to drop any names... but it could be my sister.

Okay, and me.

I can't help it! I don't know why, but I love macadamia nuts.  And they're always really expensive at the grocery store... not cool.  So when I was grocery shopping for my mom today, and saw that they were on sale... I couldn't pass them up... just couldn't.

So... what did I make with these macadamia nuts?

These!

White Chocolate Macadamia Nut Cookies!

They're one of my favorites. Probably because I don't make them that often.  But there's something about the texture of macadamia nuts and white chocolate together that tastes so good!

So here's the recipe!

White Chocolate Macadamia Nut Cookies

Ingredients
1 cup (2 sticks) butter, softened
1 cup granulated sugar
3/4 cup packed brown sugar
2 tsp. vanilla
1/2 tsp. salt
2 eggs
2 1/2 cups all purpose flour
1 tsp. baking soda
10 oz white chocolate chips (almost an entire 12 oz. bag)
1 cup chopped macadamia nuts

Directions
Preheat oven to 375F.
Beat butter, sugars, vanilla, and salt in large bowl.
Add eggs; then flour mixture until well mixed.
Stir in white chocolate chips and macadamia nuts.
Drop by rounded teaspoonfuls onto ungreased cookie sheet.
Bake 8 to 10 minutes (until edges are golden brown)

Makes about 3 dozen cookies.
