York Peppermint Brownie Cookies

Spontaneous trip home means what?

It means me telling myself that I'll go home and actually do my homework without distractions and it will be great.

Yeah.... no.  Once I actually got home, I decided that homework was the last thing I felt like doing... and there was an entire pantry filled with random baking ingredients and endless opportunities.

Then I found a recipe online that was for Peppermint Brownie Cookies, and thought perfect.

I changed the recipe a little, adding these pieces and some instant coffee to make the cookies more rich and chocolatey... and here's how they turned out!

York Peppermint Brownie Cookies

1/2 cup butter, softened
1/2 cup sugar
1/2 cup brown sugar
1/3 cup baking cocoa
1 cup flour
1 tsp. baking powder
1/2 tsp. salt
1/2 tsp. instant coffee
1 large egg
1 tsp. vanilla
8 oz (1 cup) York Pieces

Preheat oven to 350F.
Beat butter and sugars until creamy.
Mix in cocoa, flour, baking powder, instant coffee and salt to mixture.
Add egg and vanilla; mix until combined.
Stir in York Pieces to dough mixture.
Drop by rounded tbspfuls on an ungreased baking sheet.
Bake for 8-10 minutes
