Banana Bread

Traditional.  A classic.  You seriously cannot go wrong with this recipe.

My mom showed this recipe to me, and it's probably (actually it is) the best banana bread I've ever tasted.

It tastes great as a Plain Jane, or you can spice it up with some walnuts, chocolate chips, butterscotch chips, or even a combination!

Banana bread is great for a morning breakfast on the go, or just enjoyed on a lazy day with a cup of coffee or tea.

I love it.  It will always remind me of my mom, and I will never stray away from this recipe.  It's a keeper :)

Banana Bread

1 cup sugar
1/3 cup margarine or butter, softened
2 eggs
1 1/2 cups mashed ripe banana (3 to 4 medium)
1/3 cup water
1 2/3 cup all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
1/4 tsp. baking powder
1/2 cup chopped nuts (or chips, or nothing! - this can range anywhere between 1/2 to 1 cup! Whatever your preference.)

Preheat oven to 350F.
Grease bottom of a loaf pan (either 8 or 9inch works perfect!)
Mix sugar and butter until blended.
Stir in eggs, one at a time.
Add bananas and water; beat 30 seconds.
Add remaining ingredients until incorporated.
Pour into loaf pan and bake for about 1 hour.
