Homemade Funfetti Cake

Let's have a party.

I'll bring the cake.

There's something about Funfetti Cake that you just can't go wrong with.  It's most definitely a crowd pleaser.

Just look at it!  It's a party in a cake; sprinkles and all.

Now if you don't have time to run to the grocery store and get some Funfetti cake mix... don't panic.  You can make it from scratch.  It may seem intimidating... but you can do it.  I believe in you :)

It's really not as bad as you think. This cake takes about 20 minutes to bake, 15 minutes to cool, and 5 to frost!  Less than an hour to make.  Look at that :)

Your hard work will definitely be rewarded.  This cake is delicious.

Funfetti Cake

Ingredients for Funfetti Cake
1/2 cup butter
3/4 cup sugar
2 eggs
1 tbsp. vanilla extract
1 1/2 cups flour
1 tsp. baking powder
1/3 cup milk
1/3 cup assorted colored sprinkles

Preheat oven to 350F.
Cream butter and sugar in a large bowl until fluffy (about 3 minutes.)
Add eggs and vanilla.
Combine dry ingredients in a seperate, medium-sized bowl.
Alternate adding flour mixture and milk into large bowl until all ingredients have been added.
Fold in assorted sprinkles.
Pour in one greased 8x8 cake pan; bake for about 25 minutes (until toothpick comes out clean).
Once cake is completely cooled, frost.

Ingredients for Vanilla Buttercream
2 sticks of butter, softened
2 1/2 cups powdered sugar
1 tbsp. vanilla extract
1 tbsp. milk (if needed)
~1/2 cup assorted sprinkles

Cream butter in a large bowl until smooth and creamy.
Slowly add in powdered sugar.
Add vanilla and beat for 2-3 minutes, scraping sides of bowl occasionally.
Fold in sprinkles.
If frosting turns out too thick, add milk 1 tsp. at a time until desired consistency.

*Recipe can also make 12 cupcakes! Follow recipe, just bake for 18-20 minutes instead.
