Blueberry Chia Oat Muffins
1 1/4 cups flour
3/4 cup rolled oats
1/3 cup sugar
2 tbsp. chia seeds, ground
2 tsp. baking powser
1/4 tsp. salt
1 egg, beaten
3/4 cup milk
1/4 cup vegetable oil
3/4 cup fresh blueberries
Preheat oven to 350F.
Grease or line a muffin tin; set aside.
In a large bowl, combine dry ingredients (flour, oats, sugar, chia seeds, baking powder, and salt).
In another bowl, combine egg, milk, and oil.
Add egg mixture to dry ingredients and stir until just combined; fold in blueberries.
Fill muffin tins with batter about 2/3 full.
Bake 12-15 minutes (~10 minutes if using mini muffin tin) or until inserted toothpick comes out clean.
